How is it possible to grill food with an Erremix oven?
Erremix offers the possibility to grill food thanks to the use of ERREGrill. This is a special Teflon-coated grill that, when it is opportunely heated, allows to effectuate the characteristic grill-cooked marks on the products having some advantages then using the traditional grill.
The use of the ERREGrill has to be modulated according to the product that has been used. The Erremix oven has to be pre-heated with the ERREGrill positioned inside the chamber with a temperature above the 200°C, which it can also be risen to 260°C for some products. Then the product will be laid on the special grill which will leave the characteristics dark marks on the food. Therefore the cooking will continue inside the chamber.
The cooking temperature varies according to the product and to its size. Small pieces of vegetables such as radicchio, courgettes, aubergines can be cooked around the 220-240°C. Petite portion of meat like a pork of beef chop or fillet with an adequate thickness necessitates of slightly higher temperatures, around 240-250°C. It is possible to cook also products of bigger dimensions, like fishes. In this case the temperature can be maintain lower, around 200°C. In general products of small size necessitate higher cooking temperatures.
It is important to chose the correct thickness according to the cooking grade the you want to obtain. A paillard well-cooked or a pork chop does not present any problems, but if you want to realize a the piece of meat underdone, it has to have a thickness of at least 2-3 cm in the way to cook it with adequate checks on the surface without having the inside of the meat overcooked.
Especially useful during cooking of vegetables is the use of steam inside the chamber to avoid that the product will result dry on the surface due to the strong air circulation. In this case it is also possible to reduce the ventilation power.
