Besides our confectionery and chocolate shop, we run a qualified catering service.  Since 2003 we have been using a three-function analogue oven with 8 trays, in particular for steam cooking vegetables and re-generating previously prepared dishes. Our oven is a valid aid because it rapidly blanches vegetables, vacuum cooks at low temperatures, is simple and efficient and successfully meets all our requirements.At the moment we do not use the steam nozzle, but I have seen the product in use and I consider it extremely valid and versatile for catering.
