“Delta T” cooking

How does the “Delta T” cooking method work?

Delta T (∆T) cooking means that the oven temperature rises to remain constantly at a temperature above that of the food core (monitored by the core probe).  The constant difference between the core temperature and cooking chamber is user-definable and varies between 30°C and 60°C.  The food temperature therefore increases gradually until it reaches the end-of-cooking value set on the probe, reducing condensation of the liquids and keeping the food tender and juicy, with minimum loss of weight.   Because the outer part of the food does not dry, there is no loss of proteins.  Delta T (∆T) is therefore particularly suitable for cooking ham, roast whole pig or large joints of salted or marinated meat.
